Salmon en croute

2 leeks small or 1 large
200g mushrooms
tomato puree
butter
dill S+P
salmon fillets
puff pastry or breadcrumbs

Sweat the chopped leeks and mushrooms in butter and olive oil

Add tomato puree 1 good tblspn S+P dill

cover over salmon

add sheet of puff pastry + egg wash

200 degrees c 25 mins
